Here in early summer, our garden is just about in full swing. The days are scorching hot, and truth be told, the idea of spending hours in a steamy kitchen doesn’t hold much appeal. So I’m thinking now is the perfect time to lean on the garden’s bounty and keep things simple. It’s time for easy meals that don’t require much fuss and don’t heat up the house. I’m talking meals so simple that they don’t even require a recipe.
And there’s something freeing about it. About not measuring, not planning every bite. Just stepping outside and deciding what to cook based on what’s ripe, what’s ready, and what needs to be used up. If you like this idea, too, but you don’t have a garden of your own, no worries. You can pick up fresh summer produce easily at the farmer’s market, a roadside stand, or even your local grocery store.
These garden suppers are nothing fancy, but they feed our bellies. And they also nourish our natural rhythms by allowing us to keep in step with the seasons. These hot summer days are made for simple, fresh meals that let us slow down and take it a little bit easy. The heat on these sultry summer days almost insists on it.
If you read my blog, you know I’m a big comfort food fan. And to my mind, simple meals made with summer produce are their own kind of comfort food. Not the heavy, slow-simmered kind we crave in winter, but light, fresh comfort food. Think juicy tomato sandwiches, buttered sweet corn, and cucumber salads. The way summer meals used to be, before the days of central air conditioning. Our grandparents weren’t firing up the oven for casseroles in the heat of July. They ate lighter meals that were easier on the body and just right for the long, sun-soaked days of summer.
So today, I thought I’d share a few of my favorite no-recipe meals for this time of year. Simple, nourishing, and made with what’s fresh and ready. These are the kinds of throw-together suppers that don’t need measuring cups or a lot of fuss. Just a basket from the garden, maybe a hot skillet, and a little kitchen instinct.
Sliced Tomatoes with Bread and Butter
A meal that feels almost too simple to mention, and yet, there’s nothing quite like it. Thick-sliced garden tomatoes, a sprinkle of salt, and good bread with a thick smear of real butter or mayonnaise. If you’ve got a few boiled eggs or some cheese, you’ve got a feast.
Green Beans with Onions and Potatoes
Pick a mess of green beans and cook them low and slow in the crockpot with a chopped onion and a bit of fat. Bacon grease if you’ve got it (and let’s be honest, you do have some bacon grease, right?). If not, or if you're keeping it meatless, a splash of olive oil will do just fine. Toss in a few sliced potatoes to make it a full meal. Add a little water or broth. Everything gets tender and flavorful, just the way your granny might’ve made it.
Zucchini or Yellow Squash in a Skillet
Sliced thin and browned in butter with a little onion or garlic and some salt and pepper. That’s it. Maybe top with a grating of cheese or a handful of herbs if you’re feeling fancy. It’s a filling meal when paired with cornbread or alongside some eggs.
Fried Green Tomatoes
If your tomatoes are still firm and green, slice them, dredge in cornmeal (or a mix of flour and cornmeal), and fry until golden. A plate of these with a piece of ham, a biscuit, or some grilled chicken is plenty a meal for me on a hot day.
Corn on the Cob and Sliced Tomato Plates
A supper so simple it almost feels like cheating. But somehow, it always hits the spot. Just boil or grill a few ears of sweet corn and serve them alongside thick-sliced garden tomatoes. Slather the corn with lots of butter and sprinkle the tomatoes with a little salt and a generous amount of pepper. If you have some handy, a few torn basil leaves give some extra garden-fresh flavor. Add a wedge of sharp cheese or a hard-boiled egg, and you’ve got yourself a plate full of summer.
Stuffed Summer Peppers (No-Bake Style)
Take a few fresh bell peppers, halved, and stuff them with whatever you’ve got in the fridge. Tuna salad, egg salad, cottage cheese with cracked black pepper, or even a cold bean and rice salad dressed in a little vinaigrette. Have a few crackers to round out the meal. It’s cool, colorful, and just right for a hot evening.
Taco Salad
Add some fresh greens to a bowl and top with diced tomatoes, peppers, onions, sweet corn, and some black beans. Add some cheese, sour cream, and salsa, or whatever toppings you like. I like to serve with some blue corn tortilla chips. Dinner is served!
Fruit and Cream
I can’t forget about dessert, and this one is as easy as possible. Just slice up some fresh fruit like peaches, strawberries, blueberries, or whatever’s ripe, and serve it in little bowls with a splash of cream, a spoonful of whipped cream, or a dollop of yogurt. Maybe even a crumble of shortbread or vanilla wafer cookies if you’re feeling fancy. No baking, no fuss. Just something sweet to end the meal.
